Red Cabbage and Corn Slaw

Loads of fresh veggies in this healthy slaw. I absolutely love coleslaw so I am always putting together different ways to make it and make it a little healthier, of course!

I love using red cabbage, it is so bright and colorful! It’s full of vitamin C and K and one cup only has 28 calories, you can’t go wrong here! One big difference with traditional slaw is that I do not use any sugar at all. The sweetness in this slaw is brought out by slightly cooking the fresh corn. I always use fresh corn on the cob, sorry but the canned stuff is not the same at all. You can use a sharp knife to cut the corn off the cob.
I heat a little bit of butter in a skillet and cook the corn for a few minutes which brings out the corns natural sweetness. It tastes amazing, don’t skip cooking the corn!

Don’t all those fresh veggies look just divine!

The dressing is made mostly of greek yogurt but still adding in just a little mayo to get just the right flavor.

  1. 1. Heat the butter in a medium skillet and cook the corn for about 5 minutes, set aside to cool. 2. Chop/Shred and combine the rest of the veggies (red cabbage, celery, tomato, cilantro) in a large bowl. Add the Corn. 3. Add the Greek yogurt, mayo and salt to the veggies. 4. Stir until well combined. 5. Refrigerate until ready to serve.
