Sweet Plantain (Platano) Baked Eggs Breakfast
Baked eggs for breakfast with a taste of the Islands!
Heat oven to 350 degrees Fahrenheit and grease an 8-9″ baking dish.
Heat a skillet over medium heat and add coconut oil, onions and diced plantain. Cook for about 5 minutes until plantain is cooked throughout, it will be golden yellow.
Add red peppers and cook for another minute or two.
Pour cooked onions, plantain, and red peppers into your prepared baking dish.
In a large bowl crack open 8 eggs and add salt, stir to combine. Add cheese and parsley and stir until everything is mixed well.
Pour egg mixture over the ingredients that are already in your baking dish.
Bake for 25-30 mintues until center is set and top is golden.
Note: Cooking times may vary depending on size, shape and type of baking dish. Start checking at 22 minutes and check to make sure center is firm and set.
