Goat Cheese Stuffed Mini Sweet Peppers

These Goat Cheese Stuffed Mini Sweet Peppers are such a light and tasty appetizer and incredibly quick to put together. They are sure to be a big hit at your next dinner party.

Mini Sweet Pepper are small, colorful and I just love them! They are a great low carb option for dips and for stuffing with cheese of course.

First you will prepare the peppers for stuffing. I wash them thoroughly and slice in half. I then proceed to clean out the seeds, alternately you could also just cut off the tops and stuff them completely with cheese, whatever you prefer!

Next prepare the stuffing. This one is simple you will just need some basil, oregano, and salt. You will need to place the goat cheese, basil, oregano and salt in a medium bowl and mix thoroughly. If you like a little heat you could also add some red pepper flakes in the mix.

Place some of the mix into each of the prepared peppers.

Don’t those just look mouthwatering!

Now off to bake! Preheat your oven to 400 degrees Fahrenheit and bake for at least 15 minutes.

I’ve drizzled some balsamic glaze over mine but that is totally up to you!

  1. Preheat Oven to 400 degrees Fahrenheit.
  2. Arrange cut and seeded mini sweet peppers on a baking dish.
  3. Combine Goat Cheese, Basil and Oregano in a bowl and mix until ingredients are fully incorporated.
  4. Fill each of the mini sweet peppers with the Goat Cheese filling.
  5. Bake for 15 minutes.
  6. Upon serving I drizzled some balsamic glaze over mine but that is totally up to you!
