Mushroom and Goat Cheese Baked Eggs
This grown up version of a baked egg dish will have you licking your plate clean!
Preheat oven to 350 degrees Fahrenheit and grease a 8×8″ or 9×9″ baking dish.
Heat oil in a skillet over medium heat. Cook sliced mushrooms and zucchini until browned about 5 mintues. Set aside to cool slightly.
In a large bowl crack open 8 eggs and salt and mix. Add green onions and crumbled goat cheese and gently mix.
Add cooked mushroom and zucchini, stir to combine. Empty all ingredients into your prepared baking dish.
Bake for 25 minutes or unil the center is firm and set.
