Goat Cheese and Mushroom Baked Eggs

So I’ve mentioned before just how ideal and nifty I find baked egg dishes to be and this one is no exception! Bursting with melt in your mouth crumbles of goat cheese and tender sauteed mushrooms this dish will satisfy all those grown up taste buds.

Goat Cheese has a distinct peculiar flavor and you pretty much either like it or you don’t, crazy concept ha! For many that can’t digest traditional cheeses made from cow’s milk this is a rather attractive alternative. It is also a great choice as it is lower in calories than cheeses made from cow’s milk.

My veggies of choice here are mushroom and zucchini. You will need to slice these up and saute in a skillet until nice and browned. Set aside to cook slightly and meanwhile prepare the eggs. Crack open 8 eggs in a large bowl and mix with the salt. Add the green onions and crumbled goat cheese, at this point you will just stir gently as you want your goat cheese to remain in small crumbles. Now add the sauteed veggies and pour into your prepared baking dish. Bake at 350 degrees Fahrenheit for about 25 minutes or until set in the middle and top is golden. Cooking time may vary slightly depending on your particular baking dish and your oven.

Perfect for a brunch gathering or at breakfast time for those of us who enjoy a hearty savory breakfast.

Time to serve up and enjoy. Feel free to garnish with some more chopped green onions.

  1. Preheat oven to 350 degrees Fahrenheit and grease a 8x8" or 9x9" baking dish.
  2. Heat oil in a skillet over medium heat. Cook sliced mushrooms and zucchini until browned about 5 mintues. Set aside to cool slightly.
  3. In a large bowl crack open 8 eggs and salt and mix. Add green onions and crumbled goat cheese and gently mix.
  4. Add cooked mushroom and zucchini, stir to combine. Empty all ingredients into your prepared baking dish.
  5. Bake for 25 minutes or unil the center is firm and set. * Cooking times may vary slightly depending on your baking dish and oven.
