Overnight Oats are the “fast” food we all need sometimes. Not every morning is the kind where you can lounge around or have an hour to make a fancy elaborate breakfast to enjoy with your family. During the week there usually is not much time to cook in the mornings before everyone gets to where they need to be.
If you know you have some busy mornings coming up take a few minutes the night before and prepare overnight oats. I know there are many recipes floating around but I have made these so many times I have the proportions down to a T to get just the right consistency. This recipe is for a single serving or can be divided into 2 servings for those that eat smaller portions. You can also easily double or triple this recipe if you need more servings for others at home or if you wish to prep for several days (keeps fresh in the fridge for up to 4 days).
A delicious blend of oatmeal and chia seeds soaked in your favorite milk, yum! I have tested this recipe with unsweetened Almondmilk or unsweetened Almond Coconut milk blend if you use a different milk such as full fat coconut milk your proportions may need to be adjusted a little so that your result is not too dry. There are many milk options nowadays but if you use a sweetened version of one of these make sure to only add 1/2 Tbsp of Honey or Maple Syrup so that you do not overly sweeten.
All you need to do is add all the ingredients into a jar or bowl that has a lid. I like to add the oatmeal first so that the Chia seeds and honey don’t adhere to the bottom. Make sure that everything gets mixed thoroughly. You can choose to add the nuts and berries at this point but I prefer to add them right before I intend to eat it.
Cover and refrigerate! Be sure to refrigerate for at least 2 hours if you plan to enjoy it the same day. This will allow enough time for the oatmeal and chia seeds to soak in the milk.
When it is ready give it a stir, top with the blueberries and sliced almonds and enjoy!
