Being married to an Argentine native I was quickly introduced to Asado and with that comes the need for a good Authentic Chimichurri sauce. If you haven’t had Argentine style grilled meats I would jump on that asap as you are surely missing out on some of the greatest tasting meats ever, yum!
This sauce is traditionally made with olive oil, red wine vinegar, garlic, fresh parsley, red pepper (or red pepper flakes), oregano, and salt. It complements grilled meats, chicken, and even seafood perfectly!
However, there are various versions of this sauce available. I have seen recipes that call for both Cilantro and Parsley. I have seen the addition of red onions or shallots. It is valid to point out that the authentic version is not made with Cilantro or onions. That being said, I am a huge fan of mixing it up and making it to your liking so feel free to personalize! After all you are the one making it and I think adding your personal flair in the kitchen makes it that much more satisfying.
In a medium bowl I like to first mix together the Red Wine Vinegar and the minced garlic. I then mix in the rest of the ingredients and easy peasy, it’s all done! You can refrigerate for up to 3 days until ready to use.
Chimichurri sauce is also Paleo, Keto, and Atkins friendly!
